Saffron Rice
Ingredients
- tbsp olive oil
- onion, sliced
- 1 carrot, coined
- 1/2 red pepper, chopped
- 10 whole, fresh cranberries
- 2 tbsp garbanzo beans, skinned (help to digest more easily)
- 1 cup fresh spinach
- 1/2 tsp marsala seasoning
- 1/2 basil
- 1 tsp hemp seeds
- 1 tbsp nutritional yeast
Preparation
In a nonstick pan add olive oil, when hot add onion, carrots, cranberries, garbanzo beans and red peppers
Continue to cook until almost complete and add spinach until wilted to desired done
Place saffron rice in bowl, add vegetables and beyond burger mixture
Top off with nutritional yeast and hemp seed! Enjoy
