Sausage Pasta Sauce

Ingredients

  • 1 pack of shroomdogs, chopped into slices
  • 1 pepper, chopped
  • 1 onion, chopped
  • 2 large garlic cloves, chopped
  • 1 tin of beans to bulk out the sauce, I used kidney
  • 1 veg stock cube, crushed
  • 1 tsp cumin
  • 1 tsp chilli powder
  • 1 tsp bbq seasoning
  • 1 paprika
  • 1 tsp mixed herbs
  • 1 tin chopped tomatoes
  • (optional but worthwhile: 1/2 tsp red wine vinegar/balsamic vinegar and 1 tsp liquid smoke)

Preparation

  1. Add the sausage to a frying pan with a touch of oil. Fry until the sausages start to brown

  2. Add the pepper and onion to the pan and stir in. Leave to cook for five minutes, stirring occasionally

  3. Add the garlic, spices, optional ingredients and herbs and mix in

  4. Add the tin of chopped tomatoes to the pan. Fill the empty tin, a quarter of the way up with water and also add to the frying pan. Mix in and leave to simmer until the sauce thickens up
