Hidden Veggie Pasta Sauce with Beans and Spices

Ingredients

  • 335g cherry tomatoes
  • 2 red peppers
  • 1 large onion or 2 small onions
  • 3 garlic cloves
  • 1 courgette
  • 2 tins beans, drained and rinsed
  • 1 tsp cumin
  • 1 tbsp chilli powder
  • 1 tsp mixed herbs
  • 1 tsp smoked paprika
  • Extra water

Preparation

  1. Preheat the oven to 180 degrees.

  2. Roughly chop the peppers, onion and courgette. Pop on a baking tray. Peel the garlic cloves and add to the baking tray whole, along with the tomatoes. Roast in the oven for 20-25 minutes.

  3. Once cooked, add to a blender and blend until smooth.

  4. Pour the sauce into a pan. Add the spices and beans. To loosen up the sauce, add a splash of water and leave to simmer for 5 minutes.
