Hidden Veggie Pasta Sauce with Beans and Spices
Ingredients
- 335g cherry tomatoes
- 2 red peppers
- 1 large onion or 2 small onions
- 3 garlic cloves
- 1 courgette
- 2 tins beans, drained and rinsed
- 1 tsp cumin
- 1 tbsp chilli powder
- 1 tsp mixed herbs
- 1 tsp smoked paprika
- Extra water
Preparation
Preheat the oven to 180 degrees.
Roughly chop the peppers, onion and courgette. Pop on a baking tray. Peel the garlic cloves and add to the baking tray whole, along with the tomatoes. Roast in the oven for 20-25 minutes.
Once cooked, add to a blender and blend until smooth.
Pour the sauce into a pan. Add the spices and beans. To loosen up the sauce, add a splash of water and leave to simmer for 5 minutes.
