Homemade Bean Burgers with Veggies and Spices

Ingredients

  • 1/2 large onion
  • 1 clove garlic
  • 1 tsp olive oil
  • 1 medium carrot
  • 1 courgette
  • 1/2 tsp turmeric
  • 1/2 tsp ginger
  • 1 tsp paprika
  • 1 tsp cumin
  • black pepper
  • optional chilli flakes
  • 400g tin of beans
  • handful of breadcrumbs or oats
  • sesame seeds

Preparation

  1. Sauté 1/2 large onion and 1 clove garlic in 1 tsp olive oil.

  2. Chop 1 medium carrot and 1 courgette, add to the pan and allow to soften.

  3. Add 1/2 tsp turmeric, 1/2 tsp ginger, 1 tsp paprika, 1 tsp cumin, black pepper, and optional chilli flakes.

  4. Drain and rinse 1x 400g tin of beans.

  5. Put beans and vegetables into a food processor and blitz until chunky.

  6. Stir in 1 handful of breadcrumbs or oats.

  7. Mix together oats with sesame seeds, shape the bean mixture into patties, and roll in the oat and sesame seed mixture.

  8. Place on a greased baking tray, spray with a little oil, and bake at gas mark 5 for 20-30 minutes.

Tips

  1. Rinsing the beans well helps reduce FODMAP content.

  2. Serve with rice, peas, guacamole, raw vegetables, and optional tomato sauce.
