Homemade Bean Burgers with Veggies and Spices
Ingredients
- 1/2 large onion
- 1 clove garlic
- 1 tsp olive oil
- 1 medium carrot
- 1 courgette
- 1/2 tsp turmeric
- 1/2 tsp ginger
- 1 tsp paprika
- 1 tsp cumin
- black pepper
- optional chilli flakes
- 400g tin of beans
- handful of breadcrumbs or oats
- sesame seeds
Preparation
Sauté 1/2 large onion and 1 clove garlic in 1 tsp olive oil.
Chop 1 medium carrot and 1 courgette, add to the pan and allow to soften.
Add 1/2 tsp turmeric, 1/2 tsp ginger, 1 tsp paprika, 1 tsp cumin, black pepper, and optional chilli flakes.
Drain and rinse 1x 400g tin of beans.
Put beans and vegetables into a food processor and blitz until chunky.
Stir in 1 handful of breadcrumbs or oats.
Mix together oats with sesame seeds, shape the bean mixture into patties, and roll in the oat and sesame seed mixture.
Place on a greased baking tray, spray with a little oil, and bake at gas mark 5 for 20-30 minutes.
Tips
Rinsing the beans well helps reduce FODMAP content.
Serve with rice, peas, guacamole, raw vegetables, and optional tomato sauce.
