T O M a T O Soup
Ingredients
- 1 onion chopped
- 3 garlic cloves minced
- 1 28-oz can whole tomatoes with juices {san marzano}
- 1 1/2 cup water
- 1 tsp basil, oregano & paprika
- 1/3 cup full fat coconut milk
- salt, pepper & a few chili flakes
Preparation
Sauté onions with a sprinkle of salt and pepper in olive oil until soft {5 mins}
Add garlic and cook for another min
Add spices and cook for 30 seconds then add tomatoes and bring to a boil
Simmer for 10 mins & blend using an immersion blender
Add coconut milk and stir; top with salt and pepper
