T O M a T O Soup

Ingredients

  • 1 onion chopped
  • 3 garlic cloves minced
  • 1 28-oz can whole tomatoes with juices {san marzano}
  • 1 1/2 cup water
  • 1 tsp basil, oregano & paprika
  • 1/3 cup full fat coconut milk
  • salt, pepper & a few chili flakes

Preparation

  1. Sauté onions with a sprinkle of salt and pepper in olive oil until soft {5 mins}

  2. Add garlic and cook for another min

  3. Add spices and cook for 30 seconds then add tomatoes and bring to a boil

  4. Simmer for 10 mins & blend using an immersion blender

  5. Add coconut milk and stir; top with salt and pepper
