Vegan Pistachio Pesto with Spaghetti and Courgetti

Ingredients

  • 2 handfuls basil (about 60g)
  • 2-3 tablespoons nutritional yeast
  • Large handful of pistachios (about 50g)
  • 2 tablespoons EVOO
  • 2-3 cloves garlic
  • 3-4 tablespoons water if needed
  • Salt and pepper to taste

Preparation

  1. Blend all ingredients together.

  2. Stir into pasta of choice.

Tips

  1. Freeze pesto in small containers for later use.

  2. Hide courgetti inside spaghetti to make it more appealing to kids.

  3. Use this pesto with cherry tomatoes for added flavor.
