Easy Mandarin Posset Dessert
Ingredients
- 2 cups heavy cream
- 1/2 cup granulated sugar
- Pinch of salt
- 4 teaspoons mandarin zest
- 6 tablespoons mandarin juice (freshly squeezed)
Optional
- Pinch of turmeric for color
Preparation
Zest the mandarins needed for the recipe, then slice them in half and juice them carefully. Scoop out any remaining flesh.
Add heavy cream, sugar, salt, mandarin zest, and turmeric (if using) to a saucepan over medium heat.
Bring the mixture to a boil, then reduce heat slightly and simmer for 5-6 minutes, stirring often to prevent burning.
Strain the mixture through a fine mesh sieve and discard the zest, then whisk in the mandarin juice; it should thicken slightly.
Arrange the mandarin halves on a plate or platter and pour in the posset mixture. Refrigerate for at least 3 hours until set or up to overnight before serving.
Tips
Serving in mandarin halves is optional but makes it extra cute.
Top with shaved dark chocolate for added flavor.
You can use any kind of citrus fruit such as tangerine, orange, blood orange, lemon, or grapefruit.
Keep a close eye on the mixture while simmering to prevent it from boiling over quickly.
