Homemade Chocolate Pudding with Maple Walnut Ice Cream

Ingredients

Chocolate pudding

  • Cacao powder - 4tbsp
  • Soy milk - 2 cups
  • Cornflour - 2tbsp
  • Vanilla extract - 1tsp
  • 1 pinch of salt
  • Maple syrup - 3tbsp

White creamy pudding

  • Coconut cream - 1 tin (400g)
  • Coconut condensed milk - 1 tin
  • Vanilla extract - 1tsp

Preparation

  1. In a small saucepan, add cacao powder, soy milk, and maple syrup together over medium heat, whisking to combine.

  2. Once the mixture is incorporated, add cornflour dissolved in lukewarm water, mix well, and stir until the pudding thickens.

  3. Add vanilla extract and mix well. Remove from heat, cover, and refrigerate until cold and thickened.

  4. In a stand mixer bowl, add coconut cream, condensed milk, and vanilla extract; mix until smooth.

  5. Layer the puddings in glasses, top with your favorite ice cream and chopped nuts. This dessert can be made days ahead and is best served on a hot sunny day with creamy ice cream for a delightful treat.
