Oreo Mascarpone Dessert in Layered Glasses
Ingredients
- 150g Oreo cookies
- 50g white chocolate
- 2 large eggs
- 2 tablespoons powdered sugar
- a pinch of salt
- 250g mascarpone
Preparation
Set aside four cookies for garnish
Finely crush the remaining cookies in a food processor
Evenly distribute two-thirds of the cookie crumbs into the four glasses (200 ml each)
Coarsely chop the white chocolate and melt over a double boiler, then let cool slightly
Separate the eggs
Whip the egg whites with salt until stiff and set aside
Whip the egg yolks with powdered sugar until foamy
Add the mascarpone
Stir in the melted white chocolate (warm but not hot!)
Fold in the egg whites
Stir the remaining cookie crumbs into the cream
Distribute the Oreo mousse into the glasses and chill for 30 minutes
Before serving, garnish with the reserved cookies
Tips
Prepare the cream in advance and store it covered in the refrigerator for up to 2 days
Store the cookies for layering and decoration airtight at room temperature until serving, and layer into the glasses just before serving
