Pumpkin Chocolate Chunk Vegan Fudgy Blondies

Ingredients

  • 1 can chickpeas (de-shelled)
  • 1/3c pumpkin purée
  • 1/4c @bobsredmill almond flour
  • 1/2c rolled oats
  • 1/4c @traderjoes raw creamy almond butter
  • 1/4c maple syrup
  • 1tsp vanilla extract
  • 1/4tsp baking powder
  • 1/4tsp baking soda
  • 1/4tsp sea salt
  • 1/2 @hukitchen #vegan almond butter + puffed quinoa dark chocolate bar

Preparation

  1. Rinse then de-shell all of the chickpeas

  2. Add remaining ingredients (minus chocolate) into the food processor to create the batter

  3. Add to an 8x8 pan then add a chopped up @hukitchen chocolate bar and bake for 20-22 minutes at 350°F, and cool down for at least 10 minutes before cutting into them
