Pumpkin Chocolate Chunk Vegan Fudgy Blondies
Ingredients
- 1 can chickpeas (de-shelled)
- 1/3c pumpkin purée
- 1/4c @bobsredmill almond flour
- 1/2c rolled oats
- 1/4c @traderjoes raw creamy almond butter
- 1/4c maple syrup
- 1tsp vanilla extract
- 1/4tsp baking powder
- 1/4tsp baking soda
- 1/4tsp sea salt
- 1/2 @hukitchen #vegan almond butter + puffed quinoa dark chocolate bar
Preparation
Rinse then de-shell all of the chickpeas
Add remaining ingredients (minus chocolate) into the food processor to create the batter
Add to an 8x8 pan then add a chopped up @hukitchen chocolate bar and bake for 20-22 minutes at 350°F, and cool down for at least 10 minutes before cutting into them
