Vegan Gluten-Free Chocolate Berry Baked Oatmeal
Ingredients
- 2 ripe bananas
- 1/2 cup frozen raspberries
- 1/2 cup frozen blackberries
- 3/4 cup plant milk
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 3 tbsp coconut oil
- 2 cups rolled oats
- 1/3 cup walnuts
- 1/3 cup chopped baking chocolate
- 1 tsp baking powder
- 1 tsp cinnamon
- 3/4 tsp sea salt
Preparation
Preheat oven to 350 degrees F.
In a large bowl mash bananas and mix in all wet ingredients, including coconut oil, plant milk, maple syrup and vanilla extract.
In another bowl mix and combine all dry ingredients, including rolled oats, baking powder, cinnamon and sea salt.
Slowly pour wet ingredients into dry ingredients and mix until well incorporated.
Mix in both berries, chocolate chunks and walnuts.
Pour mixture into an 8x8 baking dish and top with more berries, chocolate chunks and walnuts.
Transfer baking dish to the oven and bake for 45 minutes.
Let dish cool for 10 minutes before serving.
