Vegan & Gluten Free Chocolate & Berry Baked Oatmeal

Ingredients

  • 1/2 cup frozen raspberries
  • 1/2 cup frozen black berries
  • 3/4 cup plant milk
  • 1/4 cup maple syrup
  • 1tsp vanilla extract
  • 3tbsp coconut oil
  • 2 cups rolled oats
  • 1/3cups walnuts
  • 1/3 cup chopped @xocousa baking chocolate
  • 1tsp baking powder
  • 1tsp cinnamon
  • 3/4 tsp sea salt

Preparation

  1. Preheat oven to 350 degrees f

  2. In a large bowl mash bananas and mix in all wet ingredients (coconut oil, plant milk, maple syrup & vanilla extract)

  3. In another bowl mix and combine all dry ingredients (rolled oats, baking powder, cinnamon & sea salt)

  4. Slowly pour wet ingredients into dry ingredients and mix until well incorporated

  5. After, mix in both berries, chocolate chunks and walnuts

  6. Pour mixture into a 8x8 baking dish and top with more berries, chocolate chunks and walnuts

  7. Transfer baking dish into the oven and bake for 45 minutes

  8. Let dish cool for 10 minutes before serving
