Stewed Pink Lady Apple Chia Pudding

Ingredients

Stewed apples

  • 3 Pink Lady apples
  • 3 tbsp maple syrup
  • 1 tbsp lemon juice
  • 1 tbsp water
  • 1 tsp cinnamon

Chia pudding

  • 150mls almond milk
  • 4 tbsp chia seeds
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup of the stewed apples, puréed

Serving

  • Walnuts

Preparation

  1. Peel, core and chop the apples.

  2. Add to a small pan along with the maple syrup, lemon juice, water and ground cinnamon.

  3. Bring to the boil and then reduce the heat and simmer, covered, for 10 minutes until the apple is tender.

  4. Remove from the heat and set aside to cool.

  5. Once cool, take half of the apple mixture and puree it with a stick blender.

  6. Mix together 1/4 cup of the puréed apple with the chia seeds, almond milk, maple syrup and vanilla extract.

  7. Leave for about 30 minutes for the chia seeds to absorb the liquid.

  8. Layer the chia pudding with the remaining apple puree and some crushed walnuts in two glasses.

  9. Top with the stewed apple chunks and enjoy.

  10. This can be prepped the night before for easy breakfast and will keep for 5-7 days in the fridge.
