Apple Pie Chia Pudding

Ingredients

  • For the Apple goo
  • 2 green apples, cored, diced into half inch cubes
  • 1/2 cup water
  • 1/4 cup chia seeds
  • 1 tsp. cinnamon
  • For the chia pudding
  • 1 can full fat coconut milk
  • 1/4 cup chia seeds
  • 4 tbsp. Collagen powder
  • Splash vanilla extract
  • Almond butter for serving

Preparation

  1. For the apple goo: place all ingredients in a pot and heat over medium-low for 10 minutes, stirring frequently to prevent sticking. Cook until apples are soft but not mush. Add additional water or chia seeds to achieve your desired consistency. Allow to cool and store in an air-tight container in the fridge

  2. For the chia pudding: combine all ingredients in a 4 cup container (with a lid). Cover and let set in the fridge for 8 hours or overnight

  3. Assembly for 1 serving: take 1/4 of the chia pudding and 1/4 of the apple goo and layer in a mason jar. Add almond or peanut butter as desired. Enjoy

  4. Could garnish with shredded coconut and/or hemp hearts too

  5. Note: 1 serving counts as half of your daily fruit serving while on the 21DSD
