Apple Pie Chia Pudding
Ingredients
Apple goo
- 2 green apples, cored and diced into half inch cubes
- 1/2 cup water
- 1/4 cup chia seeds
- 1 tsp cinnamon
Chia pudding
- 1 can full fat coconut milk
- 1/4 cup chia seeds
- 4 tbsp collagen powder
- Splash vanilla extract
Garnishes
- Almond butter
- Shredded coconut (optional)
- Hemp hearts (optional)
Preparation
For the apple goo: place all ingredients in a pot and heat over medium-low for 10 minutes, stirring frequently to prevent sticking.
Cook until apples are soft but not mushy.
Add additional water or chia seeds to achieve desired consistency.
Allow to cool and store in an air-tight container in the fridge.
For the chia pudding: combine all ingredients in a 4 cup container with a lid.
Cover and let set in the fridge for 8 hours or overnight.
For assembly of one serving: take 1/4 of the chia pudding and 1/4 of the apple goo and layer in a mason jar.
Add almond or peanut butter as desired.
Enjoy and garnish with shredded coconut and/or hemp hearts if desired.
