Vegan and Gluten-Free Blondies

Ingredients

  • 2 cups almond flour
  • 2 tbsp coconut flour
  • 1/3 cup coconut sugar or 0 cal natural sweetener like monk fruit and erythritol. (That’s what I used)
  • 1/4 cup almond milk or water
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon or pumpkin spice (optional)
  • 4 tsp vegan mini chocolate chips
  • 1/4 tsp sea salt

Preparation

  1. Mix all the dry ingredients except for the chocolate chips

  2. Then add the water and mix well

  3. Finally mix in the chocolate chips

  4. Press the dough evenly into a pan with parchment paper

  5. Bake at 350F for about 20min or until golden brown

  6. Let it cool and cut it into squares
