Wild Blueberry Vegan Loaf Cake
Ingredients
- 1 cup wild blueberries
- 1 1/4 cups flour
- 1 tsp cinnamon
- 1 tsp vanilla powder
- 2 tbsp lemon juice
- 1/2 cup plant-based milk
- 2 tsp apple cider vinegar
- 2 very ripe bananas
- 1 cup coconut sugar
- 1/2 cup coconut oil, melted
- 1 tsp baking soda
- 2 tsp baking powder
Preparation
Preheat the oven to 350°F.
Grease a loaf pan.
Dust the blueberries with a little flour and set aside.
Whisk together the plant-based milk and apple cider vinegar; let sit for 5 minutes.
Mix the dry ingredients together well.
Mix the wet ingredients together.
Add the wet ingredients to the dry ingredients and mix well.
Fold in the blueberries.
Bake for 1 hour or until the center is cooked.
Tips
Use very ripe bananas for the best flavor and sweetness.
