Wild Blueberry Vegan Loaf Cake

Ingredients

  • 1 cup wild blueberries
  • 1 1/4 cups flour
  • 1 tsp cinnamon
  • 1 tsp vanilla powder
  • 2 tbsp lemon juice
  • 1/2 cup plant-based milk
  • 2 tsp apple cider vinegar
  • 2 very ripe bananas
  • 1 cup coconut sugar
  • 1/2 cup coconut oil, melted
  • 1 tsp baking soda
  • 2 tsp baking powder

Preparation

  1. Preheat the oven to 350°F.

  2. Grease a loaf pan.

  3. Dust the blueberries with a little flour and set aside.

  4. Whisk together the plant-based milk and apple cider vinegar; let sit for 5 minutes.

  5. Mix the dry ingredients together well.

  6. Mix the wet ingredients together.

  7. Add the wet ingredients to the dry ingredients and mix well.

  8. Fold in the blueberries.

  9. Bake for 1 hour or until the center is cooked.

Tips

  1. Use very ripe bananas for the best flavor and sweetness.
