Belen Tava Turkish Lamb Bake

Ingredients

  • 800 grams lamb cubes
  • 2 onions
  • 4 tomatoes
  • 5 green peppers
  • 2 red bell peppers
  • 7-8 garlic cloves
  • 2 teaspoons red pepper flakes
  • 1 teaspoon black pepper
  • 1.5 teaspoons salt
  • 1 tablespoon oregano
  • 100 grams butter
  • a small bowl of suet or tail fat (optional)

Preparation

  1. Chop all ingredients into small pieces.

  2. Place all ingredients in a baking tray and add salt, black pepper, red pepper flakes, and oregano, then mix well and even out.

  3. Add suet or tail fat and butter on top.

  4. Cover with wetted and crumpled parchment paper.

  5. Bake in a preheated oven at 200°C with top and bottom heat for about 1 hour and 15 minutes.

  6. In the last 15 minutes, uncover and continue baking.
