Creamy Vegan Mushroom Pasta
Ingredients
- 1 onion
- 2-3 cloves of garlic
- 200 g mixed mushrooms
- 3 dl vegan cream
- 1 dl pasta water
- 2 tbsp parsley
- 2 tbsp chanterelle fond
- 1 tbsp corn starch
- Salt and pepper to taste
Pasta components
- Pasta for 2 servings (lentil pasta recommended)
Preparation
Chop onion and garlic into small pieces and fry them in oil in a pan.
Meanwhile, chop the mushrooms and add them to the pan.
Cook the pasta.
Add the remaining ingredients, spices, and liquids to the pan.
Stir in the corn starch to make the sauce creamier and thicker.
Add the pasta, combine everything together, and enjoy.
Notes
This recipe features a mix of wild mushrooms like chanterelles, funnel chanterelles, and hedgehog mushrooms picked from the forest, along with store-bought button mushrooms.
