Crispy German Potato Pancakes
Ingredients
- 4 large potatoes, peeled and coarsely grated
- 1 onion, finely chopped
- 1 egg
- 50 grams flour
- 1 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/2 teaspoon freshly grated nutmeg
- 2 tablespoons chopped parsley
- 1 garlic clove, finely chopped
- 60 milliliters vegetable oil for frying
- Applesauce or sour cream for serving
Preparation
Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible to ensure crispiness.
Combine potatoes, finely chopped onion, garlic, egg, flour, salt, pepper, nutmeg, and parsley in a large bowl and mix well until a sticky mixture forms.
Heat oil in a large pan over medium heat.
Add one tablespoon of the potato mixture per pancake to the pan and flatten with the back of the spoon to make them thin and crispy.
Fry each side for 3-4 minutes until golden brown and crispy, then drain on kitchen paper.
Serve hot immediately, ideally with applesauce or sour cream.
