Easy Crispy Jackfruit Fritters

Ingredients

  • 100 g dehydrated jackfruit, rehydrated and drained
  • 2 boiled and peeled potatoes
  • 1 cup coriander
  • 3 tablespoons coconut yogurt
  • 1 tablespoon mustard
  • 2 teaspoons pepper
  • 2 teaspoons salt
  • 1 tablespoon chickpea flour
  • Olive oil for frying

Preparation

  1. Add all ingredients to a food processor and blend

  2. Shape into fritters and fry

  3. Enjoy!

Tips

  1. Made with dehydrated jackfruit; canned jackfruit can be used as an alternative for similar results.
