Quick Paleo Pancake Bites with Protein

Ingredients

  • 1 cup paleo pancake mix
  • 1 cup unsweetened almond milk
  • 1-2 scoops collagen
  • 1/2 cup chocolate chips
  • Nut butter for topping

Preparation

  1. Preheat oven to 350F.

  2. In a bowl, mix 1 cup paleo pancake mix, 1 cup unsweetened almond milk, 1-2 scoops collagen, and 1/2 cup chocolate chips.

  3. Spray a mini muffin tin.

  4. Pour the batter into the tin about 3/4 full.

  5. Bake for 12 minutes.

  6. Top with some nut butter for extra deliciousness.

  7. This recipe makes 15 mini cups.
