Refreshing Japanese Fruit Sandwich

Ingredients

  • 1/2 cup seasonal fruit (mango, nectarine, pineapple and more), cut into 1 1/4 -inch pieces
  • 1 cup heavy cream
  • 2 to 3 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 4 slices Japanese milk bread

Preparation

  1. Wash the fruit and dry them well with a paper towel.

  2. In a stand mixer fitted with the whisk attachment, whip the heavy cream, sugar, and vanilla extract on medium-high speed for 3 to 4 minutes, until stiff peaks form.

  3. Spread a thick layer of whipped cream evenly on one slice of bread.

  4. Place the fruits in a diagonal line on top, and fill with whipped cream between them.

  5. Add more whipped cream on top until it covers the fruits.

  6. Put the second slice of bread on top and press. Fill the sides of the sandwich with more whipped cream, and smooth.

  7. Repeat with the other two bread slices and fruits.

  8. Cut each sandwich in half diagonally, along the line where you placed the fruit.
