Simple Grilled Fish Tacos with Slaw

Ingredients

  • 1/2 bag coleslaw mix, finely diced
  • 1/3 cup plain Greek yogurt
  • Juice of 1 lime
  • 1/2 tbsp Dijon mustard
  • 1-2 tbsp honey
  • Sprinkle of salt and pepper
  • 1 lb white fish (such as cod)
  • 2 tbsp fish seasoning (or a mix of paprika, salt, pepper, garlic powder, and chili powder)
  • Tortilla shells
  • Avocado
  • Avocado oil

Optional additions

  • Grated garlic
  • Diced green onion

Preparation

  1. Whisk together Greek yogurt, lime juice, Dijon, honey, salt and pepper

  2. Add coleslaw mix, stir well, taste and adjust dressing as needed

  3. Pat dry fish well and season well

  4. Heat a large skillet over medium high heat and add avocado oil

  5. Add fish and cook for 3 minutes per side until nice and golden

  6. Slice avocado

  7. Assemble tacos with slaw, fish, avocado and option to add a little hot sauce

Tips

  1. Prep the coleslaw in the morning for easier assembly

  2. Slice avocado ahead of time to save minutes

  3. The fish cooking takes only 6-8 minutes maximum
