Single Serve Banana Bread
Ingredients
- 3 tbsp spelt, white, or gf flour (30g)
- heaping 1/16th tsp salt
- 1 heaping tbsp very-ripe banana
- 1 tbsp coconut oil or applesauce
- 1 tbsp plant milk of choice or water
- 1/4 tsp pure vanilla extract
- 1/4 tsp baking powder
- tiny pinch baking soda for flavor
- Sweetener, amount as desired (optional)
Preparation
Mix the dry ingredients.
Mash the banana and mix in the coconut oil, dairy-free milk or water, and vanilla extract.
Combine the wet and dry ingredients and mix well.
Pour the mixture into a single muffin tin or a single serve tiffin.
Preheat the oven to 180°C if baking
Microwave for 1 to 2 minutes or bake for 12 to 15 minutes.
