Single Serve Banana Bread

Ingredients

  • 3 tbsp spelt, white, or gf flour (30g)
  • heaping 1/16th tsp salt
  • 1 heaping tbsp very-ripe banana
  • 1 tbsp coconut oil or applesauce
  • 1 tbsp plant milk of choice or water
  • 1/4 tsp pure vanilla extract
  • 1/4 tsp baking powder
  • tiny pinch baking soda for flavor
  • Sweetener, amount as desired (optional)

Preparation

  1. Mix the dry ingredients.

  2. Mash the banana and mix in the coconut oil, dairy-free milk or water, and vanilla extract.

  3. Combine the wet and dry ingredients and mix well.

  4. Pour the mixture into a single muffin tin or a single serve tiffin.

  5. Preheat the oven to 180°C if baking

  6. Microwave for 1 to 2 minutes or bake for 12 to 15 minutes.
