Oat and Chocolate Cookies in 15 Minutes

Ingredients

  • 1/2 cup oats
  • 1 cup rice or cornstarch flour
  • 1 cup flour of your choice (e.g., buckwheat flour)
  • 1/4 cup sweetener (e.g., honey, stevia, or coconut sugar)
  • 3 tablespoons coconut oil
  • 1 teaspoon baking powder
  • 70 milliliters water
  • dark chocolate chips or chunks

Preparation

  1. Pre-heat the oven to 180°C.

  2. Melt the coconut oil and chosen sweetener, then set aside.

  3. In another bowl, mix all dry ingredients and gradually add water.

  4. Add the chocolate bits to the mixture.

  5. Bake the cookies for 15 minutes. Depending on size, yields about 12 cookies.
