Fava Bean Salad with Tahini Sauce
Ingredients
- 1 cup cooked fava beans
- 2 large tomatoes, chopped
- 1 large cucumber, chopped
- 1 small head lettuce, chopped
- 1 cup arugula, chopped
- 1/4 cup parsley, chopped
Tahini sauce
- 1/4 cup tahini
- 3 tablespoons water
- 1 tablespoon yogurt
- 1 teaspoon vinegar
- 1 teaspoon salt
- 1/4 teaspoon whole cumin
- 1/4 teaspoon crushed chili
- 1 clove garlic, minced
- 2 tablespoons olive oil
For serving
- toasted Arabic bread
Preparation
In a deep bowl, place the fava beans, tomatoes, cucumber, lettuce, arugula, and parsley. Using a wooden spoon, mix the ingredients to form the salad.
For the tahini sauce: In a deep bowl, place the tahini, water, yogurt, vinegar, salt, cumin, chili, and garlic. Using a hand whisk, mix until a smooth and homogeneous sauce forms.
Spread the tahini sauce over the salad and mix the ingredients.
In a wide serving dish, pour the fava bean salad and serve it with the toasted bread.
