Fava Bean Salad with Tahini Sauce

Ingredients

  • 1 cup cooked fava beans
  • 2 large tomatoes, chopped
  • 1 large cucumber, chopped
  • 1 small head lettuce, chopped
  • 1 cup arugula, chopped
  • 1/4 cup parsley, chopped

Tahini sauce

  • 1/4 cup tahini
  • 3 tablespoons water
  • 1 tablespoon yogurt
  • 1 teaspoon vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon whole cumin
  • 1/4 teaspoon crushed chili
  • 1 clove garlic, minced
  • 2 tablespoons olive oil

For serving

  • toasted Arabic bread

Preparation

  1. In a deep bowl, place the fava beans, tomatoes, cucumber, lettuce, arugula, and parsley. Using a wooden spoon, mix the ingredients to form the salad.

  2. For the tahini sauce: In a deep bowl, place the tahini, water, yogurt, vinegar, salt, cumin, chili, and garlic. Using a hand whisk, mix until a smooth and homogeneous sauce forms.

  3. Spread the tahini sauce over the salad and mix the ingredients.

  4. In a wide serving dish, pour the fava bean salad and serve it with the toasted bread.
