Easy Sunday Lemon Mousse with Biscuit Layers

Ingredients

  • 2 cans sweetened condensed milk
  • 2 cartons heavy cream
  • 3 large lemons, juiced

Optional layers

  • butter cookies (such as Maisena), for layering (optional)
  • milk, for soaking cookies (optional)

Preparation

  1. Blend sweetened condensed milk, heavy cream, and lemon juice in a blender until smooth

  2. Pour a layer of the mousse into a serving dish and spread evenly

  3. If desired, dip the butter cookies in milk and arrange a layer over the mousse

  4. Add another layer of mousse

  5. Repeat the dipping and layering of biscuits and adding mousse as many times as desired, ending with a mousse layer

  6. Refrigerate until set

  7. Garnish with lemon zest before serving

Notes

  1. The lemon juice provides the acidity necessary to set the mousse without gelatin

Tips

  1. If your lemons are small, use more juice to ensure proper setting

  2. Biscuit layers are optional; you can make as many layers as you like or omit them entirely
