Healthy Sugar Cookie Dough Bites

Ingredients

  • 1/2 cup unsalted almond butter
  • 1.5 tablespoons vanilla extract
  • 1/4 teaspoon almond extract
  • 3/4 cup + 2 tablespoons blanched almond flour
  • 1/8 teaspoon fine grain sea salt
  • 4 tablespoons maple syrup
  • Sprinkles, to top

Preparation

  1. Stir together all ingredients other than sprinkles in a bowl until well combined.

  2. Different nut butters can have different consistencies; if the mixture is too dry to stick together, add a bit more nut butter; if too wet to hold its shape, add a bit more almond flour.

  3. Use a small cookie scoop to scoop onto a parchment-lined plate.

  4. Top with sprinkles.

  5. Store in the freezer until ready to eat, preferably while wearing very soft socks and sitting by a fireplace with a good book.
