No-Bake Banana Dates Cookies
Ingredients
Dry
- 1 cup medjool dates - pitted
- 1 cup quick oats
- 1/2 cup walnuts
- 1 tbsp shredded coconut
- 1 tbsp hemp seeds
- 1 tsp chia seeds
- 1 tbsp sunflower seeds
- 1 tsp sesame seeds
- 1 tsp ground cinnamon
- 1/2 tsp ginger powder
Wet
- 1 tsp pomegranate molasses
- 1 tbsp maple syrup or agave
- 1 tsp vanilla extract
- 1 banana
Extras
- Melted dark chocolate
- Melted peanut butter
Preparation
Blend the dates in a food processor on high for 3 minutes until paste-like.
Break it up and add the rest of the dry ingredients, then process on high for 2 more minutes to combine.
Add the wet ingredients and process on low for 2-3 minutes until all is incorporated.
Remove the mixture and roll into 10 big balls, then refrigerate for 1-2 hours.
Place them on a tray and flatten with a spoon, optionally drizzle with melted chocolate and melted peanut butter.
Refrigerate again for another 1-2 hours and store in the fridge for up to a week to snack on.
