No-Bake Banana Dates Cookies

Ingredients

Dry

  • 1 cup medjool dates - pitted
  • 1 cup quick oats
  • 1/2 cup walnuts
  • 1 tbsp shredded coconut
  • 1 tbsp hemp seeds
  • 1 tsp chia seeds
  • 1 tbsp sunflower seeds
  • 1 tsp sesame seeds
  • 1 tsp ground cinnamon
  • 1/2 tsp ginger powder

Wet

  • 1 tsp pomegranate molasses
  • 1 tbsp maple syrup or agave
  • 1 tsp vanilla extract
  • 1 banana

Extras

  • Melted dark chocolate
  • Melted peanut butter

Preparation

  1. Blend the dates in a food processor on high for 3 minutes until paste-like.

  2. Break it up and add the rest of the dry ingredients, then process on high for 2 more minutes to combine.

  3. Add the wet ingredients and process on low for 2-3 minutes until all is incorporated.

  4. Remove the mixture and roll into 10 big balls, then refrigerate for 1-2 hours.

  5. Place them on a tray and flatten with a spoon, optionally drizzle with melted chocolate and melted peanut butter.

  6. Refrigerate again for another 1-2 hours and store in the fridge for up to a week to snack on.
