Pistachio Raspberry Cacao Energy Balls
Ingredients
- 9 medjool dates, pitted
- 1/3 cup pistachios
- 1/4 freeze-dried raspberries
- 1-2 tbsp water
- 1 tbsp chia seeds
- 1 tbsp cacao powder
Coating
- 1/2 cup chopped pistachios and freeze-dried raspberries for rolling
Preparation
Whack all the ingredients, except for water, into a food processor and blitz for about 15 seconds until a sandy texture is achieved. Blenders can also be used, but be careful not to blend it to mush.
Add water in little by little and blitz until the dough sticks together when you pinch it.
Roll out into golf-sized balls and then roll in chopped pistachio and freeze-dried raspberries.
Put in an airtight container and leave to set in the fridge for at least 3-4 hours (best overnight). The balls will keep for a week in the fridge.
