Raw Rich Chocolate Truffles
Ingredients
Chocolate truffle filling
- 3-4 small ripe avocados
- 1/4 teaspoon sea salt
- 2 tablespoons unsweetened almond milk
- 1 teaspoon pure vanilla extract
- 4 tablespoons pure maple or rice malt syrup
- 4-5 drops of pure stevia
- 1/2 cup raw cacao powder
Chocolate coating
- 1 cup coconut oil in liquid consistency
- 1/2 cup raw cacao powder
- 1/2 cup pure maple or rice malt syrup
Preparation
Blend all chocolate filling ingredients together in a high-speed blender or food processor
Form the mixture into small balls using your hands and place on a cookie sheet lined with baking paper
Transfer to the freezer until firm
While waiting for the balls to firm, whisk all chocolate coating ingredients in a separate bowl until smooth
Once the truffles have hardened, dip each one into the chocolate coating and place back on the cookie sheet
Return to the freezer until the coating is firm, about 2 hours
Enjoy straight from the fridge or freezer
Notes
These truffles contain high levels of tryptophan and healthy fats, beneficial for brain function and cell membrane health
In summer, they can be enjoyed frozen for a ganache-like ice cream texture
Consume in moderation as the natural sweeteners may trigger IBS symptoms in sensitive individuals
