Super Seed Birdie Bars
Ingredients
- 1 cup cashew butter (or nut/seed butter of choice)
- 2-3 tablespoons maple syrup
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/3 cup toasted sesame seeds
- 1/3 cup chia seeds
- 1/3 cup flax seeds
- 1/3 cup hemp seeds
- 1/3 cup pumpkin seeds
- 1/3 cup goji berries
- 1/3 cup sugar-free vegan dark chocolate chips
Preparation
If your nut butter is too hard, soften it in the microwave for 30 seconds. Add all ingredients except pumpkin seeds, berries, and chocolate chips to a bowl and mix well with a fork.
Gently fold in the pumpkin seeds, berries, and chocolate chips.
Line an 8x8 glass dish with parchment paper. Pour the mixture into the dish and press down with your hands. Sprinkle with extra berries, pumpkin seeds, and chocolate chips.
Use a metal spatula to press down firmly for perfectly flat bars.
Place in the freezer for 20-30 minutes before slicing into bars. Store in an airtight container in the fridge or freezer.
