Gluten-Free Vegan Birdie Bars
Ingredients
- 1 cup cashew butter (or nut/seed butter of choice)
- 2-3 tablespoons maple syrup
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1/3 cup toasted sesame seeds
- 1/3 cup chia seeds
- 1/3 cup flax seeds
- 1/3 cup hemp seeds
- 1/3 cup pumpkin seeds
- 1/3 cup goji berries (any dried fruit)
- 1/3 cup sugar-free vegan dark chocolate chips
Preparation
If your nut butter is too hard, soften it in the microwave for 30 seconds or so. Add all ingredients to a bowl except for pumpkin seeds, berries, and chocolate chips. Use a fork to mix well and combine thoroughly.
Gently fold in pumpkin seeds, berries, and chocolate chips.
Line an 8x8 glass dish with parchment paper. Pour mixture into dish and use your hands to press down. Sprinkle with extra berries, pumpkin seeds, and chocolate chips.
For perfectly flat bars, use a metal spatula to press down firmly.
Place in freezer for 20-30 minutes before slicing into bars. Store bars in an airtight container in the fridge or freezer for easy snacks all week long.
