Vegan Aquafaba Chocolate Mousse

Ingredients

  • 200g aquafaba at room temperature
  • 200g dark chocolate
  • 1 pinch of fleur de sel

Preparation

  1. Whip the aquafaba with an electric mixer until it is white and foamy, about 10 minutes.

  2. Meanwhile, melt the chocolate and pinch of salt in a double boiler.

  3. Gently fold the melted chocolate into the stiffly whipped aquafaba using a spatula, lifting from the edges.

  4. Transfer to ramekins or leave in the bowl and refrigerate for 2 hours.

  5. Enjoy!

Notes

  1. Aquafaba is the liquid from canned legumes, such as chickpeas, and serves as an egg white substitute for vegan recipes.
