Vegan Strawberry Icecream Cubes
Ingredients
- 1 cup cashews, soaked overnight
- 30g coconut oil, melted
- 40g rice syrup
- 200gr strawberries
- juice from 1/2 lemon
- 1 /2 tsp vanilla
- a pinch of fine sea salt
- 3/4 cup dark chocolate
- 1 tbsp coconut oil
Preparation
Blend together all the ingredients for the cheesecake and place them in a silicon ice mold
Freeze for at least 8 hours
Take them out of the freezer and place on a cooling rack
Melt the chocolate with the coconut oil and pour over the cubes
Decorate with crushed nuts or whatever you fancy ?
