Vegan Strawberry Icecream Cubes

Ingredients

  • 1 cup cashews, soaked overnight
  • 30g coconut oil, melted
  • 40g rice syrup
  • 200gr strawberries
  • juice from 1/2 lemon
  • 1 /2 tsp vanilla
  • a pinch of fine sea salt
  • 3/4 cup dark chocolate
  • 1 tbsp coconut oil

Preparation

  1. Blend together all the ingredients for the cheesecake and place them in a silicon ice mold

  2. Freeze for at least 8 hours

  3. Take them out of the freezer and place on a cooling rack

  4. Melt the chocolate with the coconut oil and pour over the cubes

  5. Decorate with crushed nuts or whatever you fancy ?
