Black-Eyed Pea Masala Curry
Ingredients
- 1 cup black-eyed peas
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 bay leaf
- 1 dry red chili
- pinch asafoetida
- 1 medium onion, finely chopped
- 2 green chilies
- ginger
- 1/2 cup tomato puree
- 1/4 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon salt
- 1 tablespoon lemon juice
- coriander leaves, finely chopped
Preparation
Soak black-eyed peas in water for several hours or overnight, then cook until tender
Heat oil in a pan and add cumin seeds, mustard seeds, bay leaf, dry red chili, and asafoetida
Add chopped onion, green chilies, and ginger, sauté until the onion is golden brown
Stir in tomato puree, turmeric powder, red chili powder, and coriander powder, cook until the mixture thickens
Add the cooked black-eyed peas, garam masala, and salt, simmer for a few minutes
Finish with lemon juice and garnish with chopped coriander leaves before serving
Tips
Adjust spices and salt to taste for preferred flavor
Serve with roti or rice for a complete meal
