Winter Borscht Vegetable Base
Ingredients
- 1 kg peeled onion
- 1 kg peeled carrot
- 1.5 kg peeled beet
- 2 kg tomatoes
- 0.5 kg sweet pepper
- 250 grams vegetable oil
- 3 bay leaves
- 1 teaspoon black pepper
- 3 tablespoons salt
- 5 tablespoons sugar
- 1 head garlic
- 70 grams vinegar (9%)
Preparation
Chop all vegetables into small pieces.
Heat the vegetable oil in a large pot over medium heat.
Sauté the onion and carrot until softened.
Add the beet, sweet pepper, tomatoes, bay leaves, black pepper, salt, and sugar to the pot.
Cook the mixture until all vegetables are tender.
Stir in the garlic and vinegar.
Remove from heat and pack into sterilized jars for storage.
