Hearty Potato and Beef Casserole
Ingredients
- Potatoes, 800 g
- Butter, optional (for potatoes)
- Vegetable oil, for frying
- Ground beef, 400 g
- Onion, 1
- Garlic, 1 clove
- Carrot, 1
- Zucchini, 1
- Salt and black pepper, to taste
- Tomato paste, 1 tablespoon
- Cheese, 100 g
Optional add-ins
- Sweet pepper, to taste
- Tomatoes, to taste
Preparation
Peel and slice the potatoes
Heat vegetable oil in a skillet over medium heat and sauté onion and garlic until softened
Add ground beef and cook until browned
Stir in carrot, zucchini, tomato paste, salt, and black pepper and cook until vegetables are tender
Layer half of the potatoes in a baking dish followed by the meat mixture and then the remaining potatoes
Dot the top with butter if using and sprinkle with cheese
Bake at 350°F (180°C) for 40-50 minutes until potatoes are tender and the top is golden
Tips
Sweet pepper and tomatoes can be added to the meat mixture by preference
