Baked Herb and Vegetable Gems Delight
Ingredients
- 1 medium sweet potato mashed (about 2 cups), or pumpkin
- 2 medium zucchini grated
- 1 large carrot grated
- 1/3 cup finely diced fresh sage and parsley mixed, or 1 tbsp dried mixed herbs
- 1/2 tsp sea salt
- 1/4 tsp ground pepper
- 1 tsp dried garlic granules
- 2 tbsp coconut flour
- 1 tbsp melted coconut oil
Preparation
Preheat oven to 180 degrees Celsius.
Place the grated zucchini in a bowl and generously season with salt. Let it sit for 10 minutes and then squeeze all the water out.
Place all ingredients in a large bowl and mash well together with hands.
Mould the mix into mini gem-like balls (oval shape) and place them on a lined baking tray, ensuring there is space between each one.
Place in preheated oven and bake for 30 minutes or until golden brown.
Serve warm with your favorite dipping sauce.
This recipe can also be used to make patties for veggie burgers or salads, forming about 6 single serve patties.
