Cancer Fighting Okra Stew

Ingredients

  • 4.5 cups okra
  • 2 garlic cloves
  • 1 jalapeno
  • 2 large tomatoes
  • 1 lemon
  • 1 cup filtered water
  • 1 tsp smoked paprika or regular paprika
  • 1 tsp turmeric powder
  • Himalayan salt to taste
  • Crushed black pepper to taste
  • Optional: cauliflower rice

Preparation

  1. If okra is frozen, thaw it first. Wash and dry the okra pods. Chop off their crowns without exposing the inside flesh.

  2. Place okra, garlic, and jalapeno with a tablespoon of filtered water into a saucepan and water saute for 3-5 minutes.

  3. Add diced tomatoes and mix well.

  4. Add lemon juice, mix, and bring to a boil.

  5. Add more water to achieve desired consistency if needed to thin out the sauce.

  6. Add paprika, salt, and pepper.

  7. Cook partially covered on low heat for 30 minutes, stirring occasionally. The longer you cook, the softer the okra.

  8. Add mint or parsley when serving. Enjoy on top of cauliflower rice for extra flavor.
