Easy Chicken Stir Fry with Cauliflower Rice
Ingredients
- Chicken
- Avocado oil or olive oil
- Frozen stir fry vegetables
- Coconut aminos
- Cauliflower rice
Preparation
Heat two skillets over medium heat; you can use one skillet if preferred to give the chicken room to cook.
Cut the chicken into cubes and add to one skillet with some avocado oil or olive oil, then sauté for about 4 minutes on each side.
In the other skillet, add more oil, then add the frozen stir fry vegetables and 2 tablespoons of coconut aminos, and cook for about 8-10 minutes.
Add the cauliflower rice to the vegetable skillet and a splash more coconut aminos for taste. Note: Coconut aminos used were from Trader Joe's.
