Healthy Chicken and Vegetable Stir-Fry with Easy Sauce
Ingredients
- cubed chicken
- salt
- pepper
- 1 tablespoon arrowroot flour
- olive oil
- carrots
- peppers
- jalapeño
- red onion
- sugar snap peas
- 1/4 cup broth
- 1/4 cup tamari
- 1 teaspoon ground ginger
- 2 garlic cloves
- 1 tablespoon rice vinegar
- chili flakes
- rice or cauliflower rice
Preparation
Pat dry and cube the chicken.
Toss the chicken in a bowl with salt, pepper, and 1 tablespoon of arrowroot flour.
Fry the chicken on medium or high heat in olive oil for 3 minutes per side; remove and set aside.
Cook the vegetables (carrots, peppers, jalapeño, red onion, sugar snap peas) until tender.
Add back the chicken and the sauce made with 1/4 cup broth, 1/4 cup tamari, 1 teaspoon ground ginger, 2 minced garlic cloves, 1 tablespoon rice vinegar, and chili flakes.
Simmer for a few minutes.
Serve over rice or cauliflower rice.
