Healthy Chicken and Vegetable Stir-Fry with Easy Sauce

Ingredients

  • cubed chicken
  • salt
  • pepper
  • 1 tablespoon arrowroot flour
  • olive oil
  • carrots
  • peppers
  • jalapeño
  • red onion
  • sugar snap peas
  • 1/4 cup broth
  • 1/4 cup tamari
  • 1 teaspoon ground ginger
  • 2 garlic cloves
  • 1 tablespoon rice vinegar
  • chili flakes
  • rice or cauliflower rice

Preparation

  1. Pat dry and cube the chicken.

  2. Toss the chicken in a bowl with salt, pepper, and 1 tablespoon of arrowroot flour.

  3. Fry the chicken on medium or high heat in olive oil for 3 minutes per side; remove and set aside.

  4. Cook the vegetables (carrots, peppers, jalapeño, red onion, sugar snap peas) until tender.

  5. Add back the chicken and the sauce made with 1/4 cup broth, 1/4 cup tamari, 1 teaspoon ground ginger, 2 minced garlic cloves, 1 tablespoon rice vinegar, and chili flakes.

  6. Simmer for a few minutes.

  7. Serve over rice or cauliflower rice.
