Crispy Chicken Vegetable Stir Fry

Ingredients

  • Chicken
  • Cornstarch or arrowroot flour
  • Salt
  • Pepper
  • Avocado oil

Vegetables

  • Broccoli
  • Carrots
  • Bell peppers

Sauce

  • Stir fry sauce

Garnish

  • Sesame seeds
  • Green onions

Preparation

  1. Pat dry the chicken with paper towel.

  2. Cut chicken into cubes and toss with cornstarch or arrowroot flour, salt, and pepper.

  3. Heat avocado oil in a large skillet until sizzling hot.

  4. Add chicken and cook undisturbed in batches for 4 minutes until crispy, then flip and cook for another 3 minutes.

  5. Remove chicken and add vegetables, then sauté for 5 minutes.

  6. Return chicken to the pan and toss with stir fry sauce.

  7. Garnish with sesame seeds and green onions.

Tips

  1. Chop vegetables ahead of time for quicker preparation.

  2. Use a homemade sauce or a store-bought no-soy version for variety.
