Crispy Tomato Noodle Stir-Fry
Ingredients
- 2 Tomato Noodles (Ladang Lima brand)
- 3 chicken meatballs
- 1 chicken thigh fillet
- 8 shrimp
- 1 carrot
- 1 broccoli
- 1 tomato
- 1/2 onion
- 1 bunch mustard greens
- 1 egg
- Cooking oil
- 1 teaspoon cornstarch, dissolved in water
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- A pinch of sugar
Preparation
Boil Ladang Lima Tomato Noodles for about 2-3 minutes until half-cooked.
Prepare a frying pan and heat oil, ensuring it can submerge the noodles for even cooking.
Use an oil strainer and arrange noodles on it to form a bowl shape.
Fry the noodles in hot oil until crisp and crispy.
Lift and drain the noodles.
Heat oil and sauté garlic and onion until fragrant.
Add chicken, shrimp, and meatballs, and stir well.
Add carrot, broccoli, and tomato.
Add water and cook until vegetables soften.
Add mustard greens.
Add sesame oil, soy sauce, salt, pepper, and sugar, stir well and adjust taste.
Beat the egg and add it slowly to the stir-fry.
Add the cornstarch mixture and cook until sauce thickens.
Arrange the crispy noodles in a bowl, pour the vegetable mixture over it, and serve.
