Orange Chicken and Broccoli Stir-Fry

Ingredients

  • 2 chicken breasts
  • 3 tablespoons arrowroot flour or regular flour
  • Salt and pepper
  • Olive oil
  • 1/2 cup orange juice
  • 1/4 cup Tamari
  • 2 tablespoons maple syrup
  • 2 tablespoons rice vinegar
  • 1/4 teaspoon ginger
  • Broccoli
  • Rice or cauliflower rice (optional)

Preparation

  1. Cube the chicken breasts and toss with 3 tablespoons arrowroot flour, salt, and pepper.

  2. Heat olive oil in a pan or Instant Pot and fry the chicken until crispy, about 3 minutes per side.

  3. Make the sauce by combining 1/2 cup orange juice, 1/4 cup Tamari, 2 tablespoons maple syrup, 2 tablespoons rice vinegar, 1/4 teaspoon ginger, and salt and pepper.

  4. Pour the sauce over the chicken and simmer for 15 minutes or pressure cook for 5 minutes.

  5. Steam the broccoli.

  6. Serve over rice or cauliflower rice to keep it grain-free.
