Orange Chicken and Broccoli Stir-Fry
Ingredients
- 2 chicken breasts
- 3 tablespoons arrowroot flour or regular flour
- Salt and pepper
- Olive oil
- 1/2 cup orange juice
- 1/4 cup Tamari
- 2 tablespoons maple syrup
- 2 tablespoons rice vinegar
- 1/4 teaspoon ginger
- Broccoli
- Rice or cauliflower rice (optional)
Preparation
Cube the chicken breasts and toss with 3 tablespoons arrowroot flour, salt, and pepper.
Heat olive oil in a pan or Instant Pot and fry the chicken until crispy, about 3 minutes per side.
Make the sauce by combining 1/2 cup orange juice, 1/4 cup Tamari, 2 tablespoons maple syrup, 2 tablespoons rice vinegar, 1/4 teaspoon ginger, and salt and pepper.
Pour the sauce over the chicken and simmer for 15 minutes or pressure cook for 5 minutes.
Steam the broccoli.
Serve over rice or cauliflower rice to keep it grain-free.
