Red Cabbage and Bacon Stir-Fry
Ingredients
- olive oil
- 200g bacon bits
- 1/4 red cabbage
- 2 cloves garlic
- 2 red peppers
- 3 large handfuls of mixed frozen veg
- 1/2 tin chopped tomatoes
- 1 tbsp tomato purée
- lemon juice
- black pepper
- chilli flakes
- parsley
Preparation
Heat a little olive oil in a large pan. Add the bacon and cook.
Add the chopped red cabbage, crushed garlic and peppers. Let these soften.
Now add the frozen veg and chopped tomatoes, tomato purée and leave to simmer.
Finish with a large squeeze of lemon juice, pepper, chilli flakes and chopped fresh parsley.
