Meatball and Bean Pasta

Ingredients

  • 1 pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 tin bean, drained and rinsed
  • 1 tin chopped tomatoes
  • 1 and half tsp, chilli powder
  • 1/2 tsp chilli flakes
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp black pepper
  • 1 veg stock cube
  • Plant milk (I normally use soya or oat)
  • Meatballs (Asda, Sainsburys and Tesco sell own brand options

Preparation

  1. Prepare the meatballs according to their instructions, mine were cooked in the oven

  2. Add the pepper and onion to a pan and fry until they have started to brown

  3. Stir in the garlic and leave for another minute

  4. Add the beans, stir in and leave to cook for another minute

  5. Add the herbs, spices, chopped tomatoes to the pan and crumble in the veg stock cube. Mix together

  6. Grab the tin that the chopped tomatoes came in and pour in a centimetre and a half of milk. Swirl this around the jar to get any or the tomato residue and then add to the pan. Leave to simmer for 10 minutes. Just before serving, add the meatballs
