Easy Green Lentil Curry Meal Prep
Ingredients
- sunflower oil
- 1.5 cups lentils
- 3 cups water
- 1 can coconut milk
- 4 tomatoes
- 2 cayenne
- 1 small onion bulb
- garlic
- cumin seeds
- spices (turmeric, coriander powder, hot curry, onion powder, garlic powder, chilli flakes, chilli powder, paprika)
- a little soy sauce or salt
Preparation
Soak lentils overnight or during the day.
In a pot, add cumin seeds, diced onions, and garlic, then fry with a little oil.
Toss in spices and keep frying.
Add diced tomatoes and cayenne pepper.
After a little while, add lentils, coconut milk, water, and more spices.
Keep the lid open until it boils, then reduce heat, cover, and cook for 45 minutes.
Just before 45 minutes are up, taste and add spices as needed; use soy sauce or salt for extra flavor if desired.
