Preparation
Cut the chicken fillet into two pieces across to make it square-shaped.

In a bowl, combine the salt, onion powder, garlic powder, ginger powder, nutmeg, and white pepper for the spice mix and set aside.
In another bowl, mix the milk, lemon juice, oregano, and add half of the spice mix.
Place the chicken in the milk mixture and refrigerate for several hours.
In a third bowl, combine the flour, starch, and the remaining spice mix.
Heat the corn oil in a deep skillet.
Remove the chicken from the milk mixture and set aside.
To the milk mixture, add the baking powder, baking soda, and egg, then whisk until combined and gradually add the flour mixture to make a batter.
Take a chicken piece, coat it in the flour mixture, then dip it in the batter, coat again in the flour mixture, press lightly, and shake off excess.
Fry the chicken in the hot oil until golden brown.
In a bowl, combine ketchup, mustard, honey, mayonnaise, and hot sauce to make the sauce.
In a skillet, heat butter and toast the burger bun cut side down until golden.
Spread the sauce on the bun, add cucumber pickles, pepper pickles, tomato, lettuce, the hot fried chicken, a slice of cheese, and top with the other half of the bun, then serve immediately.
