Chicken Fillet with Lemon Sauce
Ingredients
- 6 pieces chicken breast fillet
Batter
- 1 large egg
- 1 cup full-fat milk
- 1/2 teaspoon salt
- 1/8 teaspoon white pepper
- 3/4 cup flour
Lemon sauce
- 2 tablespoons sugar
- 1/4 cup lemon juice
- 4 teaspoons starch
- 1 tablespoon fine lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon ginger
- 2-3 drops yellow food coloring
- 1/2 cup water
- 1/2 cup full-fat milk
Preparation
Pound the chicken breasts between two sheets of plastic to a thickness of 1/4 inch.
Mix the batter ingredients together until smooth.
Heat the oil in a deep skillet over medium heat.
Dip each chicken breast in the batter, then fry in the oil until golden brown; repeat with all pieces and keep warm.
Place the chicken breasts on a plate and top with the lemon sauce.
For the sauce: In a small pot, mix all the sauce ingredients well, cook over medium heat with constant stirring until thickened. Serve hot.
