Chicken Fillet with Lemon Sauce

Ingredients

  • 6 pieces chicken breast fillet

Batter

  • 1 large egg
  • 1 cup full-fat milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper
  • 3/4 cup flour

Lemon sauce

  • 2 tablespoons sugar
  • 1/4 cup lemon juice
  • 4 teaspoons starch
  • 1 tablespoon fine lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon ginger
  • 2-3 drops yellow food coloring
  • 1/2 cup water
  • 1/2 cup full-fat milk

Preparation

  1. Pound the chicken breasts between two sheets of plastic to a thickness of 1/4 inch.

  2. Mix the batter ingredients together until smooth.

  3. Heat the oil in a deep skillet over medium heat.

  4. Dip each chicken breast in the batter, then fry in the oil until golden brown; repeat with all pieces and keep warm.

  5. Place the chicken breasts on a plate and top with the lemon sauce.

  6. For the sauce: In a small pot, mix all the sauce ingredients well, cook over medium heat with constant stirring until thickened. Serve hot.
